Utah Cuisine: Fry Sauce

Being a Utah girl, I can't eat French fries without fry sauce. Fry sauce is a simple combination of ketchup and mayonnaise popular in Utah restaurants as a dipping sauce for French fries. Utah-based burger chain Arctic Circle claims to have invented fry sauce in the 1940s. Of course, combining ketchup and mayonnaise isn't a unique idea, and the condiment is known by various names and has various uses around the world.

For example, in Argentina it's called "golf sauce" and is used on French fries, burgers and sandwiches. In Germany it's called "Rott Weiss" or "Red White." In various cuisines the ketchup and mayo are combined with small amounts of mustard, garlic, lemon juice, and/or hot sauce.

Fry Sauce Recipe


If you want to make your own fry sauce, combine one part ketchup and two parts mayonnaise. Of course, you can play around with the ratio of ketchup to mayonnaise to suit your taste.

My favorite variation on fry sauce is substituting barbecue sauce for the ketchup. My least favorite is when restaurants try to pass off bottled Thousand Island dressing as fry sauce.
