Mix 1 1/2 cups chopped daikon with 3/4 teaspoon salt. - 2). Let mixture sit in the fridge until it releases 1 to 2 tablespoons of water. This will take about 30 minutes.
- 3). Rinse the salt from the daikon thoroughly and pat it dry with a paper towel.
- 4). Toss the daikon with pepper, sesame oil and rice vinegar or other seasonings of your choice.

Set watercress, baby spinach or another type of mild, tender greens on a plate. - 2). Arrange rounds or matchsticks of daikon atop the greens.
- 3). Add another ingredient of contrasting flavor, shape and color. Some examples are strawberry slices, smoked salmon and candied pecans.

Slice a large daikon into 1/2-inch round slabs. - 2). Marinate the daikon with other grilling veggies such as squash and peppers. Create a tasty marinade by adding Worcestershire sauce, garlic and other herbs to balsamic vinegar and olive oil.
- 3). Grill the daikon at medium-high heat for two minutes on each side.
