      Mix 1 1/2 cups chopped daikon with 3/4 teaspoon salt.

    • 2). Let mixture sit in the fridge until it releases 1 to 2 tablespoons of water. This will take about 30 minutes.

    • 3). Rinse the salt from the daikon thoroughly and pat it dry with a paper towel.

    • 4). Toss the daikon with pepper, sesame oil and rice vinegar or other seasonings of your choice.

    • 5). Set in the fridge to marinate overnight.
