Hi, I'm Jennifer Cail and on behalf of Expert Village I'm going to show you how to make this delicious spicy Pumpkin Cheesecake. I'm just going to finish scraping the beater off a bit and then it's time for our final ingredient for the pumpkin pie, which is the pumpkin. I'm going to add one cup of pureed pumpkin. I highly recommend using canned pumpkin for any of your baking needs. People might want to use fresh pumpkin, perhaps cooking one down that's cut out of a pumpkin patch. But, you're not guaranteed the flavor of the pumpkin. A lot of pumpkins seem a little watery. If you're going to cook a pumpkin down, something fresh you got from the grocery store or pumpkin patch, I recommend using it for more savory dishes, not for baking purposes. The canned pumpkin has a more consistent, consistency. It doesn't have much water as you would get by cooking a pumpkin down and you can be more sure of the texture you want to end up. Also you want to be more sure of the flavor, that it's going to be nice and pumpkiny. If you're using a regular pumpkin, it's not going to have that nice pumpkin flavor. It's a very weak flavor and that's why you want to stick to the canned pumpkin. Just gonna mix this up until we have a smooth consistency and then we'll be ready for the next step.
